A UCLA study found that Indigenous Peruvian Andean populations have the highest known number of AMY1 gene copies. The gene produces an enzyme that begins breaking down starch in the mouth, suggesting that people with a long history of eating starch-rich foods may have contributed to this genetic adaptation.
